At sara’s wedding last week the desert was a brandy snap basket filled with ice cream and a berry sauce. Serve with either whipped cream and top with diced fruit of your choice. Delicious gluten free brandy snaps.
Just for fun, and to help them live up to their name, i added a dash of brandy in with the brandy snap mixture for a little extra ‘kick’.
Brandy snaps are sweet, crisp cookies or biscuits that are in the shape of cylinders and are filled with one of various types of creams, such as butter cream, orange cream or whipped cream. I had ice cream and berry sauce. Our delicious gluten free christmas brandy snaps are an old time favourite. 2 tsp ground dried ginger (if you like it extra gingery, add another tsp) 5 tbsp brown rice flour.
