They are quickly fried in our soy oil blend to keep the falafel balls.
That depends on the recipe and/or restaurant. Mezeh mediterranean grill (crystal city), arlington: We soak chickpeas overnight and grind them (twice!) with hand cut onions, scallions, parsley, cilantro, green peppers, garlic and kosher salt. I think they taste better that way, but you can bake them if you prefer a lighter option.
